Anda Curry, or Egg Curry, is a popular and flavorful dish that brings together the rich flavors of Indian spices with the simplicity of hard-boiled eggs. This hearty and satisfying curry is known for its aromatic masala, creating a delicious blend that pairs well with rice, chapati, or bread. Here’s a quick and easy recipe to help you whip up a delectable Anda Curry in your own kitchen.

Here’s a simple recipe for Anda Curry (Egg Curry):

Ingredients:

  • 6 eggs, hard-boiled and peeled
  • 2 large onions, finely chopped
  • 2 tomatoes, pureed
  • 1/4 cup cooking oil
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears.
  4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  5. Pour in the tomato puree and cook until the oil starts to separate from the masala.
  6. Cut the hard-boiled eggs into halves or quarters and gently place them in the pan, ensuring they are coated with the masala.
  7. Add garam masala and stir gently to combine. If the curry is too thick, you can add a little water to achieve the desired consistency.
  8. Cover the pan and let the curry simmer on low heat for about 10-15 minutes, allowing the flavors to meld.
  9. Taste and adjust salt and spices as needed.
  10. Garnish with fresh coriander leaves.

Serve Anda Curry hot with steamed rice, chapati, or crusty bread. Enjoy your delicious homemade egg curry!
